This afternoon I made challah bread pudding with bananas and dark chocolate. It wasn’t the prettiest dish I’ve ever baked, but it was damn good!
I’d been wanting to experiment with banana bread pudding ever since I had a truly delightful version made with croissants at a special dinner a while back. I adore challah so I thought it would be a good alternative.
I saw this Bon Appetit video circulating Facebook recently, and it looked pretty simple. I used ground cinnamon and vanilla extract instead of the cinnamon stick and vanilla bean. And I added a layer of sliced ripe bananas and dark chocolate chips in between two layers of the pudding mix. I only let it sit and soak for three hours because we were simply too impatient. It didn’t matter.
Today’s #OneGoodThing was a happy baking experiment with tasty results!
