Today’s #OneGoodThing was a pair of Honeycrisp apples that I baked for dessert. I developed a baked apple craving after eliminating cold/raw foods from my diet (as a gut health experiment). That’s also why this isn’t paired with vanilla ice cream.
Mama isn’t eating sugar or dairy right now so I stuffed hers with chopped golden raisins, pecans and a date. I used a tablespoon of brown sugar (instead of the date) in mine. Then I put a dollop of ghee and a sprinkle of cinnamon on top of each apple. I put them in a baking dish together with a little hot water, baked them at 375° for 35 minutes. They were SO good!!!
Baked apples were the perfect winter dessert on this cold and stormy day. Mama has already requested a repeat for tomorrow! Bonus #OneGoodThing: We didn’t have to leave the house in this scary strong rain that’s causing major flooding nearby and highway closures. While we had some minor garage flooding, we were able to stay warm and dry!
