Today’s #OneGoodThing was harvesting our very first zucchini from our garden!
Our zucchini went from garden-to-table-to-mouth within minutes and it was amazing! We sautéed it in olive oil with a little salt, pepper, and lemon juice. It was naturally buttery and delicious — and the freshest zucchini we’ve ever eaten!

Today will be harvesting the corn my boys planted.

That’s wonderful! How did it turn out, Joshua? We planted corn last year and we loved watching it grow! Our corn came out a bit too starchy tasting though so we decided to try watermelon and zucchini instead this year.

Turned out there was a caterpillar in each ear. We ended up cutting off the parts the caterpillar ate and kept the rest. A few ears look like they will be starchy, but the rest looks really good.
