Our two favorite veggies

broccoli and potatoesTonight the Nosy Parker family was wiped out and decided to stick with an easy dinner featuring our two favorite veggies!

We’ve been obsessed with sautéed broccoli lately and can’t seem to get enough of it. Seriously. We eat it so regularly we should probably plant some broccoli in our veggie garden. We sauté it in coconut oil so it is still super healthy. Tonight we added a bit of lemon juice just before it finished cooking. Delicious!

We also made ugly smashed potatoes. These are our new favorite potatoes and we can’t get enough of them either! Previously we’d used small red potatoes, but they’re even better made with these teeny tiny potatoes!

Normally I’d also cook us a protein, but we were too tired after an exhausting couple of days.

Today’s #OneGoodThing was this delicious and healthy dinner at home!
