Homemade Maui salad

Today we recreated one of our favorite big meal salads from the best salad place ever: Mixt Greens.

When I worked in San Francisco, I loved racing across downtown for one of these massive, healthy, delicious salads — my favorites were the Cowboy, Bachelor and Maui salads.

The Maui salad (apparently no longer on the menu) features coriander-crusted and seared Ahi tuna along with avocado, cherry tomatoes, fresh mango, and cucumber, topped with macadamia nuts and a vinaigrette. We’ve previously used or made a mango vinaigrette, but today we tried pomegranate vinaigrette, which was ok but not my favorite.

This (sort-of) Maui salad was awesome and today’s #OneGoodThing!
