After harvesting a large bowl of tomatoes from our garden Friday, I was eager to do something with them before they went bad. But my Crohn’s is acting up with awful gut pains, so I’ve been limited in my energy in the kitchen.
A fellow foodie in an online cooking group suggested roasting them with chopped onions, fresh garlic, and seasonings. I ended up also cooking them down on the stovetop after roasting. I’ll eventually turn the mixture into tomato sauce for pasta. But it just felt so good to use them up and not let them go to waste.
