Reunited — and it tastes so good!

Our absolute favorite couldn’t-live-without-it kitchen appliance broke about 3 weeks ago, and today the necessary replacement part finally arrived.

We received our Instant Pot just less than a year ago as a gift from a friend, and we became hooked immediately. This pressurized multi-cooker became our go-to for healthy, nutritious meals and snacks. Incredible beef stew in 35 minutes. Falls-off-your-fork moist chicken (from frozen) in 15 minutes. Perfect hard-boiled eggs in 5 minutes. The list goes on and on. We love this machine, and it was a real blow to our eating habits (and my meal-prep sanity) to lose it.

Luckily, the company figured out what was wrong based on my description and photos, and they sent us a complimentary replacement lid. I did a test batch hard-boiling just 2 eggs to start. I was deeply grateful when it worked again.

Today’s #OneGoodThing is having our beloved Instant Pot back in commission — and the tasty, healthy dinner I made using it! Special thanks to Rebecca for sending us this time-saving, magic machine. Life was more difficult without it.
