I tested out a new recipe specially for Mama tonight and it was a massive hit! These incredibly delicious Artichoke Olive Pizza Bites were so easy it felt like cheating.
I stumbled across this recipe online, and I realized it sort of elevated our favorite pizza toppings (without any tomato, which doesn’t always sit well with us). Mama helped me with assembly. We cut rounds from pizza dough (made by our local organic market), and we topped it with olive tapenade, grated Parmesan, and marinated artichoke hearts.
Mama loved how easy these were to eat! These tasted so much better than the little bit of work we put into them. They aren’t the prettiest, but they were damn good!
Today’s #OneGoodThing was discovering a new favorite meal that’s easy and quick!

I might try these while I am in Italy. They sound easy and yummy.

They’re so good! And though it’s possible to make everything from scratch, the beauty of this was that I didn’t! All pre-made and we just assembled, and it was delicious!!!
