They may not look pretty, but these tacos were delicious!
I threw them together with the leftover taco meat I’d cooked on Taco Tuesday and smashed up a fresh avocado for the guacamole. Mama’s tacos were more colorful with salsa (I’m avoiding tomatoes at the moment), but she was too hungry for photos.
This tasty meal was the highlight of a stressful day in self-quarantine. With my weakened immune system and Mama’s age, we won’t be going anywhere anytime soon.
