Glorious Caprese toast

Mama and I enjoyed a glorious lunch of Caprese sourdough toast with sun-warmed tomatoes and sweet basil from our garden! It was such a delicious treat! Fresh mozzarella paired with tomatoes and basil is a longtime favorite of ours because it reminds us of being in Italy. Today’s #OneGoodThing was this beautiful, tasty Caprese toast with…

Our first zucchini harvest

Today’s #OneGoodThing was harvesting our very first zucchini from our garden! Our zucchini went from garden-to-table-to-mouth within minutes and it was amazing! We sautéed it in olive oil with a little salt, pepper, and lemon juice. It was naturally buttery and delicious — and the freshest zucchini we’ve ever eaten! Day 178 of 365. And…

Eating from our garden

This evening we picked our first beautiful, ripe plums and ate them in our garden. They were sweet and delicious! And we miraculously managed to get to them before the birds, critters or insects! Mama and I also pulled our first purple carrots from our vegetable garden as well as a bunch of giant radishes.…

Table scraps reborn

Today Mama and I planted a successful table scraps growing experiment in our garden box. We saw this video with instructions circulate Facebook recently. I cut off the bottom 2 inches of the organic celery (from the market), and placed it in a glass with a bit of water. We loved watching the celery leaves grow…

Freshly stocked fridge

Today I finally made it out to the store and stocked up on fresh produce. I usually grocery shop every Friday, but we’d been away and then we’d been sick so our fridge was near empty (except for condiments). It was so good to fill the produce drawers again. Today’s #OneGoodThing was a freshly stocked fridge…

Fresh artichoke hearts

Tonight we had tiny, fresh steamed artichokes for dinner! Our favorite part is the heart, so the downside of little artichokes was teeny, tiny hearts. Still good, just not enough deliciousness! Every time we have artichokes, I remember how differently they’re prepared in Italy. In Venice, we watched produce vendors hack the vegetables into discs, discarding…

Reunited — and it tastes so good!

Our absolute favorite couldn’t-live-without-it kitchen appliance broke about 3 weeks ago, and today the necessary replacement part finally arrived. We received our Instant Pot just less than a year ago as a gift from a friend, and we became hooked immediately. This pressurized multi-cooker became our go-to for healthy, nutritious meals and snacks. Incredible beef…
