I made a giant pot of butternut squash soup last night, which we’ll be enjoying all weekend. Pureed cannelloni beans make the dairy-free soup very creamy, while a bit of crispy turkey bacon gives it a lovely smokiness.
The recipe, of no-longer-remembered origin, is an old favorite of mine that I’ve been making for more than a decade.
Today’s #OneGoodThing was devouring another bowl of homemade butternut squash soup with Mama!

I never thought of putting canneloni beans into my pumpkin soup, and I’m going to try a little smoky paprika next time.
