I made a key lime pie with a toasted marshmallow topping tonight—and I had a great time torching my homemade whipped frosting.
Quarantine meals are starting to get creative as we eat up our supplies. Thankfully, we have a small lime tree in our backyard. I was thrilled to find everything else I needed in our pantry and fridge. I decided to mash up two different SmittenKitchen recipes—one for the graham cracker crust and lime filling, and another for the toasted marshmallow. Though I’m sure the flavors will be even better tomorrow when it sets properly, it was delicious!
