
Yes, I admit this lovely plate of goat cheese appetizers was our dinner.
I’d like to tell you that eating cheese for dinner is a new thing for us since the pandemic began, but that wouldn’t be the truth. Just as I’d like to tell you that we eat dinner at a reasonable hour–but again, that isn’t the case. We’ve always tended toward the nocturnal, and that has only gotten worse during this time of Shelter-at-Home.
This delicious appetizer-turned-dinner is one of our favorite combos: soft goat cheese topped with fresh, chopped parsley and honey. The tangy and sweet mix pair beautifully with the bitter herb.
