In another of my late-night baking sessions, I made triple lemon cupcakes from scratch. I based it off of a lemon cake recipe from SmittenKitchen, but I added lemon rind shavings to the cake and to the frosting.
This was the first time I’d ever made my own lemon curd and I used lemons from our tree. The process wasn’t easy, but it was definitely worth it. The frosting didn’t end up as I was expecting, but it was all delicious! I even got to share a cupcake over the fence with our wonderful neighbor, Ti!
