Today’s #OneGoodThing was this delicious batch of colorful, smashed potatoes I made for dinner. Mama said these were the best potatoes she’s ever had. I only wish there were more leftovers!
They were easy to make: I boiled the potatoes with a sprig of fresh rosemary until they were soft. Then I smashed them with a spatula onto a baking sheet, and topped them with olive oil, Himalayan salt, and rosemary. I baked them at 400º until the skin was crispy. Delightful!

They’re called Rainbow Gems Fingerling Potatoes. They’re certified organic so the colors must be natural. I found them at Trader Joe’s. They were so tasty!!!
